The Best Vegan Pound Cake
Ingredients:
- 2 1/2 cups all-purpose flour
- 1 1/2 cups granulated sugar
- 1 tsp baking powder
- 1/2 tsp salt
- 1 cup vegan butter, softened
- 1 cup plant-based milk (almond or soy work well)
- 2 tsp vanilla extract
- 1/4 cup applesauce
- 1 tbsp apple cider vinegar
Instructions:
- Preheat oven to 350°F (175°C). Grease a 9×5-inch loaf pan.
- In a large bowl, whisk together flour, sugar, baking powder, and salt.
- In another bowl, cream vegan butter until smooth. Add milk, vanilla, applesauce, and vinegar. Mix well.
- Gradually add dry ingredients to wet, mixing until just combined.
- Pour batter into prepared pan and smooth the top.
- Bake for 60-70 minutes, or until a toothpick inserted comes out clean.
- Cool in pan for 10 minutes, then transfer to a wire rack to cool completely.
