How to Steam Clams: 12 Steps
Step 1: Choose fresh clams
When buying clams, opt for those that are tightly closed or close when tapped. These are signs of fresh and healthy clams.
Step 2: Rinse the clams
Place the clams in a colander and thoroughly rinse them under cold running water to remove any loose sand or grit.
Step 3: Soak the clams
Fill a large bowl with cold, salted water, and soak the clams for 30 minutes to an hour to help remove any remaining sand or grit from their shells.
Step 4: Discard any open clams
After soaking, tap any open-clam shells. If they do not close, discard them, as they may not be safe to consume.
Step 5: Prepare your steaming liquid
In a large pot, combine water (or other liquids such as white wine, beer, or clam broth) with aromatic ingredients like garlic, herbs, and spices. Bring the mixture to a simmer.
Step 6: Add the clams
Once your steaming liquid is ready, add the cleaned clams to the pot in an even layer. If needed, prepare multiple batches so as not to overcrowd the pot.
Step 7: Steam the clams
Cover the pot tightly with a lid and let the clams steam for about 5-10 minutes until their shells open. Shake the pot gently from time to time without removing the lid.
Step 8: Monitor the progress
Keep an eye on the steam escaping from under the lid for an idea of how much heat is being applied. Adjust accordingly if necessary.
Step 9: Remove cooked clams
As soon as most of the clam shells have opened up (at least three-quarters), use tongs or a slotted spoon to transfer them to a serving dish.
Step 10: Discard any unopened clams
If any clams remain unopened after being steamed, discard them, as they may not be safe to eat.
Step 11: Strain the steaming liquid
Strain the steaming liquid through a fine mesh sieve to remove any grit or debris. Save the liquid to serve alongside the clams as a dipping sauce or incorporate it into other recipes.
Step 12: Serve the steamed clams
Serve your steamed clams immediately with crusty bread and the strained steaming liquid. You can also add melted butter, lemon wedges, or additional herb garnishes to taste.
With these 12 steps, you’ll be able to enjoy delicious and perfectly steamed clams at home. Happy cooking!
