How to Make Sourdough Bread: 11 Steps
Sourdough bread is a delicious and nutritious option for baking enthusiasts. The tangy taste, chewy texture, and signature aroma make it a favorite among home bakers. Here are the 11 steps to making your own sourdough bread.
1. Assemble ingredients and equipment: You will need flour (preferably unbleached all-purpose or bread flour), water, salt, and an established sourdough starter. For equipment, have on hand a mixing bowl, kitchen scale, dough scraper, clean kitchen towel, baking sheet or Dutch oven, and a sharp knife or lame.
2. Refresh the starter: Feed your sourdough starter by mixing equal parts flour and water by weight (usually 50 g each). Leave it covered at room temperature for approximately 4-12 hours. Ensure the starter is doubled in size and bubbly before using it.
3. Mix dough ingredients: Combine the following ingredients in a mixing bowl – your refreshed starter (100 g), 450 g flour, 300 g warm water, and 10 g salt. Mix thoroughly until everything is evenly incorporated.
4. Knead the dough: On a clean surface, knead the dough for about 10-15 minutes until smooth and elastic. If it’s too sticky, add a little flour but avoid adding too much.
5. Bulk fermentation: Place the dough back into the mixing bowl and cover with a damp towel or plastic wrap. Leave it to ferment at room temperature for anywhere from 4-12 hours or until it has doubled in size with visible bubbles.
6. Shape the loaf: Turn out the risen dough onto a lightly floured surface and gently deflate it by pressing down with your fingertips. Stretch and fold the outer edges of the dough towards its center to create a round ball shape.
7. Proofing: Place your shaped loaf onto a baking sheet lined with parchment paper or in a floured basket. Cover the dough with a kitchen towel and let it proof for 2-4 hours or until it has risen noticeably and is puffy.
8. Preheat your oven: Preheat your oven to 475°F (245°C) about 30 minutes before your dough finishes proofing. If using a Dutch oven, preheat it with the lid on.
9. Score the loaf: Just before baking, score the surface of the dough with a sharp knife or lame to allow steam to escape during baking and help the bread develop a beautiful crust.
10. Bake: Place your loaf in the preheated oven either on the baking sheet or into the hot Dutch oven with its lid. Bake covered for 20 minutes. After that, remove the lid and bake for an additional 25-30 minutes until the crust is golden brown and crisp.
11. Cool and enjoy: Remove the bread from the oven and let it cool on a wire rack for at least an hour before slicing and enjoying your freshly baked sourdough bread.
With these 11 steps, you’re well on your way to enjoying homemade sourdough bread. Remember that practice makes perfect – so keep trying until you achieve your desired loaf. Happy baking!
