How to Make Nougat
Nougat is a classic confectionery treat that has delighted people for centuries. This sweet, chewy delight is the perfect addition to your dessert repertoire. This article will guide you through the process of making nougat, discussing ingredients, tools, and techniques for creating this delicious candy.
Ingredients:
– 2 cups granulated sugar
– 1/2 cup honey
– 1/2 cup water
– 1/4 teaspoon salt
– 2 large egg whites, at room temperature
– 1 teaspoon pure vanilla extract
– 3 cups roasted nuts (almonds, hazelnuts, pistachios, or a mix)
Equipment:
– Candy thermometer
– Parchment paper or silicone mat
– Heavy-based saucepan or pot
– Electric mixer with whisk attachment
Instructions:
1. Prepare your pan: Line a 9×13-inch pan with parchment paper or a silicone mat, allowing some overhang on all sides. This will help you remove the nougat later.
2. Combine sugar, honey, water, and salt in a heavy-based saucepan or pot. Clip a candy thermometer to the side of the pot and ensure that the tip doesn’t touch the bottom of the pot.
3. Place the saucepan over medium heat and cook until the mixture reaches 250°F (120°C), stirring occasionally to prevent scorching. This will take about 10 minutes.
4. While the sugar mixture is cooking, beat egg whites in an electric mixer with a whisk attachment on medium speed until stiff peaks form.
5. Once the sugar mixture reaches 250°F (120°C), carefully and slowly pour it into the beaten egg whites with the mixer still running on low speed. Be very cautious as the sugar mixture is extremely hot.
6. Once all of the sugar mixture has been incorporated, increase the mixer’s speed to medium-high and continue beating until the nougat becomes thick and glossy. This process will take approximately 5-10 minutes.
7. Add vanilla extract and mix until well combined.
8. Use a wooden spoon or spatula to fold in the roasted nuts, ensuring they are evenly distributed throughout the nougat.
9. Pour the nougat into your prepared pan and smooth the top with a spatula. Allow it to cool completely at room temperature for at least 3 hours or overnight.
10. Once cooled, lift the nougat out of the pan using the parchment paper overhang. Use a sharp knife to cut it into squares or rectangles.
11. Store your homemade nougat in an airtight container, separated by layers of parchment paper, at room temperature for up to two weeks.
Now that you know how to make nougat, you can experiment with different nuts, dried fruits, or even chocolate chips to create your own unique flavors. Enjoy this delicious treat and share it with friends and family!
