How to Make Chapati

Chapati, also known as roti or phulka, is a popular Indian flatbread typically served as an accompaniment to curries and other dishes. Making chapati at home is simple and requires a few basic ingredients. Follow these nine steps to make soft, delicious chapatis every time!
1. Gather the ingredients: To make chapati, you will need whole wheat flour (atta), water, salt (optional), and oil or ghee for cooking.
2. Prepare the dough: In a mixing bowl, combine 2 cups of whole wheat flour and 1 teaspoon salt (if using). Add water gradually while mixing the dough with your hands, adding just enough to form a smooth and soft dough. The consistency should be like playdough – not too sticky or too dry.
3. Rest the dough: Cover the dough with a damp cloth and let it rest for 15-20 minutes at room temperature. This allows the gluten in the flour to relax and makes the dough easier to roll out.

5. Roll out the chapatis: On a lightly floured surface, use a rolling pin to roll each portion into a thin circle about 6 inches in diameter. Try to keep an even thickness throughout so that they cook evenly.
6. Preheat a skillet: Place a non-stick or cast iron skillet over medium-high heat and allow it to become hot but not smoking.
7. Cook the chapatis: Place a rolled-out chapati onto the preheated skillet and cook for about 30 seconds or until small bubbles appear on its surface. Flip the chapati using tongs or a spatula and cook for another 30 seconds until it starts to puff up. Once puffed, flip it again and press down gently on the edges with a spatula to promote even cooking.
8. Optional: Apply oil or ghee to cooked chapatis: After each chapati is cooked, you can lightly brush it with oil or ghee for a richer taste. This step is optional and depends on your preference.
