How to Drain Ricotta Cheese: 14 Steps
Ricotta cheese is a versatile and delicious ingredient in many recipes, from lasagna and stuffed shells to desserts like cannoli and cheesecake. However, it can sometimes have too much moisture, which can affect the texture and taste of your dish. Draining ricotta cheese is an easy process that can make all the difference. Here are 14 steps to guide you through:
1. Begin by choosing a type of ricotta cheese with less moisture. Whole milk ricotta tends to have a firmer texture and slightly lower moisture content compared to part-skim or low-fat varieties.
2. Assemble your draining materials: a fine mesh strainer or sieve, a mixing bowl large enough to fit the strainer, cheesecloth or a clean tea towel, and a spatula or spoon.
3. Place the strainer over the mixing bowl, making sure the bottom of the strainer doesn’t touch the bottom of the bowl.
4. Dampen your cheesecloth or clean tea towel with water and squeeze out any excess moisture.
5. Line the strainer with the dampened cheesecloth or tea towel, ensuring there’s plenty of extra material draped over the sides.
6. Use a spatula or spoon to transfer the ricotta cheese into the lined strainer.
7. Spread out the ricotta in an even layer for quicker drainage.
8. Carefully fold any remaining cheesecloth or tea towel overtop of the cheese to cover it.
9. If you want to speed up the draining process, you can place a weight on top—such as a plate with cans on it—to gently press down on the ricotta cheese.
10. Place your setup in the refrigerator for at least two hours, but preferably overnight if possible.
11. After enough draining time has passed, remove your setup from the refrigerator and carefully unwrap your cheese.
12. Using the cheesecloth or tea towel, gently press on the cheese to remove any remaining moisture.
13. Scrape the drained ricotta cheese into a clean container and store it in the refrigerator until you’re ready to use it.
14. Discard the excess liquid that has collected in the mixing bowl.
By following these steps, you can easily remove excess moisture from your ricotta cheese and enjoy its rich and creamy texture in any recipe you choose. Happy cooking!
