3. Make an incision behind the gill plate: Start by cutting vertically just behind the gill plate until your knife meets the spine of the fish.
4. Cut horizontally along the spine: Turn your knife at a 90-degree angle and make an incision along the fish’s spine from head to tail using a smooth sawing motion. Keep your knife blade slightly angled down towards the ribs as you make this cut.
5. Lift and separate: As you continue cutting along the spine, use your free hand to lift the fillet up and away from the bones, making it easier to see where you’re cutting.
6. Remove rib bones: Once you’ve separated the fillets from the spine, carefully cut out any remaining rib bones that may still be attached to the meat.
7. Turn over and repeat: Flip your fish over and repeat steps 3-6 on the other side to remove both fillets from the crappie.
