Artichokes are a versatile and delicious vegetable that can be prepared in a variety of ways, including boiling. Boiling artichokes is a simple and effective method for tenderizing the leaves and heart, making them easy to enjoy with your favorite dips and sauces. In this article, we’ll walk you through 12 steps that will have you enjoying perfectly boiled artichokes in no time.
1. Choose fresh artichokes: Look for artichokes with tight, green leaves and a heavy feel when selecting them at the store or farmer’s market. Brown spots or loose leaves are an indication that the artichoke is not as fresh as it could be.
2. Prepare your pot: Find a large pot with a lid that can comfortably hold all the artichokes you plan to cook. Fill it two-thirds of the way with water, ensuring there’s enough to submerge the artichokes but not overflow the pot when they’re added.
3. Add seasoning: To flavor the boiling water, add a couple of garlic cloves or some chopped onion, lemon slices, and/or bay leaves depending on your taste preferences.
4. Heat the water: Bring the seasoned water to a boil over high heat.
5. Wash the artichokes: Rinse each artichoke thoroughly under cold running water to remove any debris trapped between the leaves.
6. Trim the stems: Cut off any remaining stem from each artichoke so that they can sit flat during boiling.
7. Remove outer leaves: Peel away any small, tough outer leaves near the base of each artichoke to expose more tender inner layers.
8. Snip off leaf tips: Using scissors, trim approximately half an inch from the tips of each leaf to remove any sharp points.
9. Prepare for submersion: To prevent floating during boiling, place a heat-proof plate or bowl on top of the artichokes to weigh them down and keep them submerged.
10. Boil the artichokes: Carefully lower each artichoke into the boiling water and cover the pot with a lid. Adjust the heat to maintain a rolling boil, cooking for 20-45 minutes depending on their size. Artichokes will be done when you can easily insert a knife into the center and outer leaves pull away without resistance.
11. Drain and cool: Using tongs, carefully remove each artichoke from the boiling water and let them drain upside down on a plate or in a colander until they are cool enough to handle.
12. Serve and enjoy: Once cooled, serve your perfectly boiled artichokes with your favorite dip or sauce, such as melted butter, aioli, or hollandaise. Peel off individual leaves one by one, dipping them in sauce and scraping off the tender flesh with your teeth. When you reach the heart, remove any remaining fibrous choke before enjoying every last delicious bite!
