Ingredients:
– 1 large eggplant, diced
– 2 medium zucchinis, sliced
– 1 large red bell pepper, chopped
– 1 large yellow bell pepper, chopped

– 1/4 cup fresh basil, chopped
– 1/4 cup fresh parsley, chopped

Instructions:
