Ingredients:
For the cake:
– 2 cups all-purpose flour
– 1 3/4 cups granulated sugar
– 3/4 cup unsweetened cocoa powder
– 1 1/2 tsp baking powder
– 1 1/2 tsp baking soda
– 1 tsp salt
– 2 large eggs, at room temperature
– 1 cup whole milk
– 1/2 cup vegetable oil
– 2 tsp pure vanilla extract
– 1 cup boiling water
For the frosting:
– 1 cup unsalted butter, softened
– 1 cup creamy peanut butter
– 4 cups powdered sugar
– 1/4 cup whole milk or heavy cream
– 2 tsp pure vanilla extract
For the topping:
– Roughly chopped Reese’s peanut butter cups (as many as desired)
Instructions:
1. Preheat your oven to 350°F (175°C) and grease two 9-inch round cake pans. Line the bottom with parchment paper and set aside.
2. In a large mixing bowl, whisk together the flour, sugar, cocoa powder, baking powder, baking soda, and salt until well combined.
3. In another bowl, whisk together the eggs, milk, vegetable oil, and vanilla extract. Gradually pour the wet ingredients into the dry ingredients and mix until just combined. Then slowly add boiling water to the mixture, stirring constantly, until you have a smooth batter.
4. Divide the batter evenly between the two cake pans and smooth the tops with a spatula. Bake for around 30-35 minutes or until a toothpick inserted into the center comes out clean. Allow the cakes to cool in the pans for about 10 minutes before removing them onto a wire rack to cool completely.
5. While the cakes are cooling, prepare the frosting by combining softened butter and peanut butter in a large mixing bowl. Beat on medium speed until creamy. Gradually add powdered sugar, milk (or cream), and vanilla extract, and continue to beat until light and fluffy.
6. After the cakes have completely cooled, level them by trimming off any domed tops with a serrated knife. Place one cake layer on a serving plate or cake stand, spread an even layer of frosting over it, then top with crushed Reese’s peanut butter cups.
7. Place the second cake layer on top of the frosted one and spread another layer of frosting over it. Next, cover the entire cake with a thin layer of peanut butter frosting as a crumb coat (this will help keep crumbs from showing in your final frosting layer). Chill in the refrigerator for about 30 minutes to set.
8. After the crumb coat has set, apply a generous layer of peanut butter frosting over the entire cake. Lastly, decorate with an abundance of chopped Reese’s pieces.
Your Reese’s explosion cake is now ready to be served! Slice it up to reveal its delicious layers, and enjoy an unforgettable dessert that will leave your guests craving more!
